The majority of the furniture in my home comes from second hand or charity shops.
I work a little magic on them and I end up with a unique one off piece which I just love.
However sometimes my hubby brings home bargains from the food shops which we just won't use.
This is how we ended up with today's recipe.
He found a reduced pineapple for 23p, bargain yes, useful no.
The first thing that came into my head was "Pineapple Upside down cake", one of my mum's old school recipes.
She often made this cake for us back in the 80's and so I thought, why not.
Here is what you will need.
A Pineapple (a reduced price one is even better because then you make bargain cake)
6oz Soft Brown Sugar
6oz Self raising flower
1 teaspoon of either Vanilla Extract or Rum flavouring (personal preference)
I large spring form cake tin
Pre heat oven to Gas Mark 4 (180C) (350F)
I use an electric Hand mixer to get a nice fluffy texture.
Cooking time depends on how much juice is in your pineapple and how accurate your ovens temperature is.
Mine baked for 32 minutes.
Enjoy with lashings of cream or my personal favorite Hot Custard.
